CREAMED & SPICY CRAB CAKES PARMESAN IN A SAUCE OF MINCED GARLIC – CAPERS – TOBASCO – YOGURT – MAYO  

For 4:

–4 ready-prepared crab cakes

–Parmesan cheese (one-quarter cup)

–minced garlic (1 tablespoon, bottled)

–capers (2 tablespoons, bottled)

–tobasco (squirt on each crab cake, bottled, or other hot sauce)

–yogurt (one-third cup)

–mayonnaise (2 tablespoons)

–salt and pepper

–olive oil

1 – Place the crab cakes in a covered baking dish.  In a small mixing bowl, place yogurt, mayonnaise, Parmesan cheese, minced garlic, and season with salt, pepper, and olive oil (drop or 2).  Stir well.  Spoon the sauce on top of the crab cakes.  Finish with capers and tabasco on top.

2 – Microwave on high for 2 and one-half minutes.

3 – Serve the crab cakes hot, with the sauce.

CREAMY SALMON THYME WITH MINCED GARLIC & GREEN ONIONS IN YOGURT – MAYO – WHITE WINE SAUCE ATOP POLENTA

For 4:

–salmon (size of 4 decks of cards, 1 pound)

–thyme (1 teaspoon, dried)

–minced garlic (bottled, 1 tablespoon)

–green onions (3 stalks, chopped)

–yogurt (one-eighth cup, bottled)

–mayonnaise (one-eighth cup, bottled)

–white wine (4 tablespoons)

–salt and pepper

–polenta (packaged, one-half package)

No olive oil

1 – Place 1 and one-quarter cup of water in a covered baking dish.  Microwave on high for 7 minutes.  Then add one-half package of polenta.  Stir well, about 3 minutes.  When finished stirring, keep covered to preserve warmth.

2 – Place the yogurt and mayonnaise in a small mixing bowl.  Stir well.  Then add white wine and minced garlic, and stir again, being sure that sauce is smooth.

3 – Place the salmon in a covered baking dish.  Pour the sauce on top.  Sprinkle with thyme and green onions.

4 – Microwave on high for 7 minutes.  Salmon should be flaky.

5 – Serve the salmon hot, atop quinoa, couscous, pasta, rice, or polenta.

INDIAN TANDOORI COD WITH YOGURT – LIME – MINCED GARLIC – CURRY – GREEN ONIONS

–cod (size of 4 decks of cards, 1 pound)

–yogurt (4 heaping tablespoons)

–lime juice (3 squirts, bottled)

–minced garlic (bottled, 1 tablespoon)

–curry (bottled, 1 tablespoon)

–green onions (3 stalks, chopped)

–salt and pepper

–olive oil

1 – Place the cod in a covered baking dish.  Drench the cod in lime juice.  Season with salt, pepper, curry, and minced garlic (spread the garlic on top).  Place yogurt, smoothed over the top of the cod.  Sprinkle green onions on top.  Finish with a few drops of olive oil.

2 – Microwave the cod on high for 8 minutes.

3 – Serve the cod and sauce hot.

CHILLED TUNA STEAK SALAD WITH FRESH BASIL TOMATO – ROMAINE LETTUCE – SHREDDED CARROTS – BROCCOLI FLORETS – GREEN ONIONS – CHICKPEAS IN YOGURT – MAYO – BASIL – LEMON DRESSING

–tuna steak (1, large size or 2, small)

–tomato (medium, chopped)

–romaine lettuce (6 leaves, broken into bite-sized pieces)

–shredded carrots (packaged, 1 handful)

–broccoli florets (florets cut from 1 head of broccoli)

–green onions (4, chopped, fresh)

–chickpeas (canned, rinsed and drained, one-third can)

–yogurt (5 heaping tablespoons)

–mayonnaise (3 tablespoons)

–basil (3 teaspoons, dried, divided)

–lemon (1 tablespoon)

–salt and pepper

–olive oil

 

1 – Place the tuna steak in a covered baking dish with one-quarter cup of water.  Season with salt, pepper, 1 teaspoon of basil, and olive oil.  Microwave on high for 4 minutes.  (Tuna steak is best if a little rare.)

2 – Place the romaine lettuce, shredded carrots, broccoli florets, green onions, tomato (seasoned with salt, pepper, and 1 teaspoon of basil), and chickpeas in a large salad bowl.  Cut apart the cooked tuna steak into bite-sized pieces, and place on top.  Refrigerate until time for dinner.

2 – Place the yogurt, mayonnaise, lemon juice, and 1 teaspoon of basil in a small mixing bowl.  Stir well.  Keep refrigerated until time for dinner.

3 – Serve the tuna steak salad chilled with the chilled dressing.

COD SPRINKLED BY GARLIC – HERB BREADCRUMBS WITH YOGURT – SRIRACHA SAUCE SERVED WITH A SIDE SALAD OF SHREDDED CARROT – GREEN ONIONS – LIME JUICE

For 4:

–cod (size of 4 decks of cards, 1 pound)

–garlic – herb breadcrumbs (boxed, 3 tablespoons)

–yogurt (plain, non-fat, 3 tablespoons)

–Sriracha sauce (bottled, 2 teaspoons)

–shredded carrot (1 cup, raw)

–green onions (2 stalks, chopped)

–lime juice (2 squirts, bottled)

–salt and pepper

–olive oil

1 – Place the cod in a covered baking dish with one-eighth cup of water.  Season with salt, pepper, and olive oil.  Sprinkle garlic – herb breadcrumbs on top.  Microwave on high for 6 and one-half minutes.  When finished, keep covered to preserve warmth.

2 – Stir together the yogurt and Sriracha sauce briskly.

3 – Stir together the carrots, green onions (chopped), and lime juice. 

4 – Serve the cod hot, with cold sauce on the side, and the cold carrot salad on the side as well.

CURRIED SALMON WITH TOMATO – ONION – GINGER – SRIRACHA – GARLIC – CORIANDER – TURMERIC – CUMIN – MINCED CLOVES – CINNAMON – SUGAR IN YOGURT SAUCE ATOP JASMINE RICE

For 4:

–salmon (size of 3 decks of cards, 1 pound)

–tomato (1, fresh, medium, chopped)

–onion (one-half, sliced)

–ginger, coriander, turmeric, cumin, minced cloves, cinnamon (bottled separately)

–Sriracha sauce (1 tablespoon, or cayenne pepper to taste)

–garlic (minced, in a jar)

–sugar (1 teaspoon)

–yogurt (plain, non-fat, 5 tablespoons)

–jasmine rice (packaged, sticky rice)

–salt and pepper

–olive oil

1 – Place 1 cup of jasmine rice in a covered baking dish.  Add 1 and one-fourth cup of water and a few drops of olive oil.  Microwave on high for 5 minutes; then microwave on 50 percent power for 10 minutes.  When finished, keep covered to preserve warmth.

2 – Chop 1 medium tomato and place in a covered baking dish.  Season with salt and pepper.  Add one-half sliced onion.   Season with ginger, coriander, turmeric, cumin, minced cloves, cinnamon, 1 tablespoon of Sriracha sauce, 1 tablespoon of minced garlic, 1 teaspoon of sugar, 5 tablespoons of plain, non-fat yogurt, and olive oil.  Stir well.  Microwave on high for 3 minutes. 

3 – Nestle the salmon amid the sauce, season with salt and pepper, and then spoon some of the sauce over the salmon.  Finish with a drop or two of olive oil.  Microwave on high for 7 and one-half minutes.

4 – Serve the salmon and sauce hot, atop the jasmine rice.

OVEN FRIED COD TACOS WITH SEASONED SAUCE – SLAW – CHUNKY TOMATO SALSA / BAKED NAVY BEANS WITH CATSUP & BROWN SUGAR

–cod (size of 3 decks of cards, one-half pound)

–corn tortilla shells

–mayonnaise

–yogurt (non-fat, plain)

–plain breadcrumbs (boxed)

–cumin

–oregano

–dill

–salt and pepper

–olive oil

–banana peppers (bottled, cut)

–lime juice

–cayenne pepper

–capers

–angel hair slaw

–chunky tomato salsa (your favorite degree of spicy, bottled)

–navy beans (dried; soak overnight)

–onion (one-half)

–catsup (one-half cup)

–brown sugar (2 generous tablespoons)

–chicken broth (non-fat, low sodium)

1 – Place two-thirds cup of navy beans in a slow cooker.  Slice one-half onion and add to the cooker.  Place one-half cup of catsup and 2 generous tablespoons of brown sugar in the cooker.  Add chicken broth just to cover the beans and sauce.  Cook in a slow cooker for 7 hours; do not remove lid to cover, because cooking will be compromised.  When finished, keep setting on “warm” until time for dinner.

2 – Place 2 tablespoons of mayonnaise and 2 tablespoons of yogurt in a small bowl.  Add half a dozen cut portions of banana peppers and about a dozen capers.  Season with salt, pepper, cumin, oregano, dill, cayenne pepper, and a squirt of lime juice.  Stir well.  Set aside.

3 – Place 2 handfuls of angel hair slaw in a colander and rinse well.  Then place in a bowl for serving.

4 – Place cod in a covered baking dish with a little water.  Season with salt, pepper, and generously with olive oil.  Sprinkle plain breadcrumbs on top.  Microwave on high for 6 minutes.

6 – Microwave 2 tortilla shells for 30 seconds.

5 – Use a buffet to serve dinner.  Have guests place a portion of cod within a tortilla shell, then add slaw and sauce.  Finish with salsa.  Serve the beans as a side.

CHICKEN FINGERS ROLLED IN CRUSHED TEXAS TOAST CROUTONS ATOP HONEY MUSTARD GREEN SALAD WITH RAW BROCCOLI – SUMMER SQUASH – VIDALIA ONION

–4 chicken tenderloins or breast strips

–Texas Toast seasoned croutons

–Dejon mustard

–yogurt (non-fat, plain)

–honey

–lemon juice

–salad greens

–broccoli (florets only)

–summer squash (3, small)

–Vidalia onion (1, small, sliced)

–salt and pepper

–olive oil

1 – Place 4 tablespoons of yogurt in a small mixing bowl.  Add 2 tablespoons of Dejon mustard and a squirt of lemon juice (to taste).  Add 2 tablespoons of honey.  Stir well.  Set aside.

2 – Place half a bag of croutons in a plastic bag.  Using the back of an ice cream spoon, crush the croutons against the kitchen counter.  Place the chicken in a separate plastic bag.  Season with salt, pepper, and olive oil.  Pour the crushed croutons on top of the chicken.  Shake well.  Place the chicken in a covered baking dish with a very little water.  Set aside.

3 – Place one-half package of salad greens in a mixing bowl.  Peel and slice the squash, adding to the bowl.  Cut off the florets of the broccoli, and then slice, as needed, before adding to the bowl.  Slice the onion and add to the bowl.  Season the whole with salt and pepper.  Stir well.  Then pour honey mustard salad dressing, to taste, atop the salad greens and vegetables, and then stir well.

4 – Microwave the chicken for 5 minutes on high.

5 – Serve the chicken hot, on top of the cold salad.

A Simple Dinner:  OVEN FRIED COD WITH GARLIC – HERB BREADCRUMBS / BROCCOLI WITH HOT SAUCE / BAKED POTATOES WITH BUTTER & YOGURT

–cod (size of 3 decks of cards, one-half pound)

–garlic – herb breadcrumbs (boxed)

–salt and pepper

–olive oil

–broccoli (fresh, 1 stalk)

–hot sauce (such as Tabasco)

–potatoes (2, medium, red)

–Promise Activ margarine (heart-healthy)

–yogurt (non-fat)

 

1 – Scrub potatoes.  Microwave for 5 minutes on high; then turn over and microwave for 5 minutes more, on high.  Set aside.  Do not break open the potatoes yet.

2 – Place cod in a plastic bag.  Season with salt, pepper, and olive oil.  Pour one-third cup of breadcrumbs into the bag.  Shake vigorously.  Set aside.

3 – Cut the stalk off the broccoli, leaving the florets and stem.  Break apart the florets and stem.  Place in a covered baking dish.  Add 1 inch of water.  Season with salt, pepper, and olive oil.  Microwave on high for 3 to 4 minutes, depending on your desired crispness.

4 – Microwave the cod for 6 minute.  Cod is done when it begins to break apart.

5 – Cut open the potatoes.  Season with margarine.  Serve the yogurt on the table, to be added as desired.

6 – Serve the dinner hot.

A Simple Dinner (Encore) DILLED SALMON / BROCCOLI WITH HOT SAUCE / BAKED POTATO WITH YOGURT & BUTTER

Note:  This is my favorite dinner.

–salmon (size of 3 decks of cards, one-half pound)

–dill

–salt and pepper

–olive oil

–broccoli (1 stalk, fresh)

–hot sauce (like Tabasco)

–potatoes (2, red, medium)

–yogurt (non-fat, plain)

–Promise Activ margarine (heart-healthy)

1 – Scrub the potato skins, pierce all around with a fork, and place in the microwave.  Cook on high for 5 minutes; then turn the potatoes over and cook on high for another 5 minutes.  When finished, don’t open immediately (to preserve warmth)

2 – Place salmon in a covered baking dish with a little water.  Season with salt, pepper, dill, and olive oil.  Set aside.

3 – Chop off the stalk of the broccoli, leaving the stems and florets.  Break apart the stems and florets.  Place in a covered baking dish.  Season with salt, pepper, and olive oil.   Microwave on high for 3 minutes (1 minute longer for more tender broccoli).

4 – Microwave the salmon on high for 4 and one-half minutes.  When finished, test the center to be sure that salmon is done; if not, return to the microwave for another 1 minute on high.

5 – Serve the dinner hot:  salmon, potatoes (with yogurt and margarine), and broccoli (with hot sauce).
