HEALTHY CHICKEN FRICASSEE WITH CHOPPED RED ONIONS & PARSLEY IN A WHITE SAUCE OF NONFAT MILK – WHITE WINE – WHITE FLOUR – EXTRA VIRGIN OLIVE OIL

For 2:

A comfort dish, creamy, delicious. . .good but healthy in this version. . .

–3 chicken tenderloins (organic)

–chopped red onions (one – third cup)

–milk (nonfat, one-half cup)

–white wine (one-half cup)

–salt and pepper

–extra virgin olive oil

1 – Place 2 tablespoons of milk in a glass measuring cup.  Microwave for 30 seconds.  Add 1 teaspoon of flour to the milk, beating rapidly until dissolved.  Add more milk to the one-half cup level.  Then add white wine to the 1 cup level.  Season with a few drops of extra virgin olive oil, and then, to taste, salt and pepper.

2 – Place in a covered baking dish.  Add chopped onions.  Microwave on high for 3 minutes.  Place the chicken tenders atop the sauce.  Season with salt and pepper.  Sprinkle chopped parsley on top.

3 – Microwave for 4 and one-half minutes.  When finished, test the center piece for doneness.  If not cooked, return to the microwave for 1 minute more.

4 – Serve the chicken tenders and sauce hot, atop pasta (microwave the pasta, salted and uncovered, in water 1 inch above the pasta for 6 minutes; then microwave on 50 percent power for 8 minutes).

POACHED SALMON ALFREDO TOPPED WITH FRESH TOMATO – DILL – PARSLEY – FRESH LEMON & SUBMERGED IN A CREAMY WHITE SAUCE OF SHREDDED PARMESAN – MILK – FLOUR – DIJON

This salmon will melt in your mouth!

–salmon (size of 4 decks of cards, 1 pound)

–tomato (fresh, medium, chopped)

–dill (1 teaspoon, dried, bottled)

–parsley (1 handful, fresh, chopped)

–lemon (fresh, sliced when chilled)

–Parmesan cheese (one-quarter cup, shredded)

–milk (one – half cup, dairy or almond—not soy)

–flour (1 tablespoon)                        

–Dijon mustard (1 tablespoon)

–salt and pepper

–extra virgin olive oil

 

1 – Make the white sauce first:  Place milk in a microwaveable cup, and microwave for 45 seconds.  In a second cup, place flour.  Slowly add the hot milk to the second cup, beating vigorously.  Add Parmesan cheese and Dijon mustard.  Stir well.

2 – Place the salmon in a covered baking dish.  Sprinkle with salt, pepper, and dill.  Then top with chopped tomato and sliced lemon.  Finish with parsley and a few drops of olive oil.

3 – Pour the sauce on top of the salmon.  Microwave on high for 5 minutes.  Salmon is best if slightly undercooked.

4 – Serve the salmon and sauce hot.

CRAB CAKES VALENTINE ATOP ASPARAGUS IN PARMESAN WHITE SAUCE SEASONED WITH SHERRY

Note:  For an easier dinner, use ready-prepared crab cakes.

For 4:

–crab cakes (4)

–asparagus (frozen, 1 package)

–Parmesan cheese (shredded)

–milk (almond or dairy, not soy, three-fourth’s cup)

–flour

–sherry (cooking sherry is fine, one-fourth cup)

–salt and pepper

–olive oil

1 – Place three-fourth’s cup of almond or dairy milk in a microwaveable cup.  Add one-fourth cup of sherry.  Microwave on high for 1 and one-half minutes.  In a separate cup, place 1 tablespoon of flour.  When the milk/sherry has heated, slowly add to the flour, stirring briskly.  Stir one-fourth cup of shredded Parmesan cheese into the milk/sherry.  Place the sauce in a covered baking dish.  Microwave on high for 3 minutes.  When finished, stir well.

2 – Microwave the asparagus, seasoned with salt, pepper, and olive oil in a covered baking dish for 4 minutes.

3 – Place the sherry/milk/Parmesan sauce in the dish with the asparagus.  Place crab cakes in the sauce, spooning sauce on top.  Microwave on high for 2 minutes.

4 – Serve the crab cakes hot, atop the asparagus and covered with sauce.

LEMON BUTTER COD TOPPED BY GREEN ONIONS IN A CREAMY TURMERIC SAUCE

Note:  There is speculation that turmeric protects against dementia.  This is based in part on the fact that people in India often live long lives with clear minds, and they frequently enjoy curcumin in turmeric and curry sauces for their dining.  Turmeric, often substituted for expensive saffron, has much more curcumin than curry.

For 4:

–cod (size of 4 decks of cards, 1 pound)

–green onions (2 stalks, chopped)

–salt and pepper

–olive oil

–Promise margarine (heart-healthy)

–lemon (1, fresh, sliced)

–lemon zest (lemon peel)

–flour

–milk (dairy or almond)

–turmeric (bottled)

1 – Place 1 cup of dairy or almond milk in a microwaveable cup.  Microwave on high for 1 and one-half minutes.  In a second cup, place 1 tablespoon of flour.  When the milk has heated, slowly add the milk to the flour, beating vigorously.  Place the sauce in a covered baking dish.  Add a generous amount of turmeric.  Microwave the sauce for 3 minutes on high.  Stir well.

2 – Place the cod in the sauce, spooning some sauce over the top of the cod.  Season with salt, pepper, and lemon zest.  Chop 2 stalks of green onions and place on top of the cod.  Season with 1 tablespoon of melted healthy margarine.  With a sharp knife, cut the lemon into slices.  Place the lemon slices atop the cod.  End with a few drops of olive oil.

3 – Microwave on high for 9 minutes.

4 – Serve the cod hot, atop white rice (preferably), couscous, pasta, or quinoa.

HOT OPEN – FACED CHICKEN SANDWICHES WITH BABY BELLA MUSHROOMS – PARMESAN – FAUX BACON – PAPRIKA IN MILK WHITE SAUCE ATOP BUTTERED & SPLIT WHOLE WHEAT ENGLISH MUFFINS

For 4:

–6 chicken tenderloins or breast strips

–mushrooms (baby bella, 6 to 8, sliced)

–Parmesan cheese (shredded)

–Bac’n pieces (soy bacon)

–paprika

–milk (half cup, dairy or almond, not soy)

–flour (1 heaping tablespoon)

–whole wheat English muffins (6)

–olive oil

–salt and pepper

–margarine (Promise margarine is heart-healthy)

1 – Place one-half cup of dairy or almond milk in a microwaveable cup.  Microwave on high for 1 and one-half minutes.  In a second cup, place 1 heaping tablespoon of flour.  When the milk has heated, slowly add it to the flour, stirred very briskly.  Season with salt and pepper.  Set aside.

2 – Place the chicken in a covered baking dish.  Season with salt, pepper, paprika, and olive oil.  Add the white sauce.  Slice 6 to 8 baby bella mushrooms, and add on top of the chicken.  Sprinkle with Parmesan cheese.  Microwave on high for 8 minutes.  When finished, sprinkle Bac’n pieces on top (the Bac’n pieces will be crispy if not cooked).

3 – Split 6 whole wheat English muffins, and spread with Promise margarine.  Microwave on high for 2 minutes.

4 – Serve the chicken and sauce atop the English muffins.

CHICKEN TETRAZZINI WITH DICED BABY BELLA MUSHROOMS IN MILK – EGG WHITE SAUCE & TOPPED WITH PARMESAN & HERB CORNBREAD CRUMBS / FARFALLE PASTA

For 4:

–6 chicken tenderloins or breast strips

–baby bella mushrooms (6 to 8, diced)

–milk (dairy or almond; soy doesn’t do well in the microwave)

–flour

–egg yolk (1)

–salt and pepper

–olive oil

–cornbread crumbs (I used Pepperidge Farm herb cornbread crumbs)

–Parmesan cheese (shredded)

–farfalle pasta (bowtie)

1 – Place 1 cup of farfalle (bowtie) pasta in an uncovered baking dish with water to cover.  Season with salt.  Microwave on high for 6 minutes; then microwave for 8 minutes on 50 percent power.  When finished, keep covered to preserve warmth.

2 – Cut chicken into bite-sized pieces, and add to a covered baking dish.  Be careful to clean surfaces that chicken has touched.  Dice 6 to 8 baby bella mushrooms, and add to the dish.  Set aside.

3 – Place one-half cup of dairy or almond milk in a microwaveable cup.  Microwave on high for 1 and one-half minutes.  Place 1 heaping tablespoon of flour in a another cup.  Slowly add the heated milk to the flour, stirring briskly.  Add 1 egg yolk, still stirring briskly.   Then season with salt and pepper.  Pour the white sauce on top of the chicken and mushrooms. 

4 – In a small cup, place one-half cup of cornbread crumbs, and one-fourth cup of Parmesan cheese.  Season with a generous amount of olive oil.  Stir.  Spoon the crumbs and Parmesan on top of the chicken and mushrooms.  Microwave on high for 9 minutes.

5 – Drain the pasta.

6 – Serve the chicken tetrazzini hot, atop the pasta.

CAYENNE COD WITH GREEN ONIONS & PARSLEY IN WHITE SAUCE OF WHITE WINE & BROTH ATOP ROASTED RED PEPPER & BASIL QUINOA BLEND

For 4:

–cod (size of 4 decks of cards, 1 pound)

–cayenne pepper

–green onions (2 stalks, finely sliced)  

–parsley (1 handful, chopped)

–white wine

–chicken broth (non-fat, low sodium)

–flour (1 heaping tablespoon)

–salt and pepper

–olive oil

–quinoa blend (roasted red pepper & basil, quinoa & brown rice, Near East brand, 1 box)

1 – Place entire box of quinoa blend with seasonings in a covered baking dish.  Add 1 and one-third cup chicken broth.  Season with olive oil.  Stir.  Microwave on high for 6 minutes; then microwave on 50 percent power for 9 minutes.  When finished, keep covered to preserve warmth.

2 – Place one-third cup of white wine in a microwaveable cup; add one-third cup of chicken broth.  Microwave on high for 1 and one-half minutes.  In a separate cup, place 1 heaping tablespoon of flour.  Slowly add the hot wine & broth to the flour, stirring briskly.  Set aside.

3 – Place 1 pound of cod in a covered baking dish.  Drench in lemon juice.  Pour the white sauce over the cod.  Season the cod with salt, pepper, and cayenne pepper (to taste, not too much).  Finely slice 2 stalks of green onions, and then place atop the cod.  Chop 1 handful of fresh parsley, and place atop the cod.  Season the cod with olive oil.  Microwave on high for 6 minutes; then microwave on 50 percent power for 12 minutes.

4 – Serve the cod hot, atop the quinoa.

CREAMY BASIL – PARSLEY COD WITH MATCHSTICK SQUASH – VIDALIA ONION – RED BELL PEPPER SLICES – MINCED GARLIC & TOPPED WITH PARMESAN CHEESE

–cod (size of 3 decks of cards, one-half pound)

–basil, parsley (fresh)

–summer squash (2, small)

–onion (Vidalia, one-half)

–red bell pepper (one-half, sliced)

–minced garlic (bottled)

–Parmesan cheese (shredded)

–milk (dairy or almond; soy doesn’t microwave well)

–flour (1 tablespoon)

1 – Peel and slice squash into matchstick pieces.  Place in a covered baking dish.  Peel and slice one-half Vidalia onion, and place in the dish.  Wash and slice one-half red bell pepper, adding to the dish.  Microwave 1 cup of milk (dairy or almond) for 1 minute on high.  When finished, add 1 tablespoon of flour, stirring briskly.  Pour over the vegetables in the baking dish.  Season with basil, parsley, salt, pepper, minced garlic, and olive oil.  Microwave on high for 3 minutes.  When finished, nestle the cod in the sauce (do not place any vegetables on top of the cod).  Season the cod with salt, pepper, basil, parsley, and olive oil.  Sprinkle Parmesan cheese on top.

2 – Microwave for 7 minutes on high.  Test the center of the cod to be sure that it breaks apart easily.

3 – Serve the cod hot, with the vegetables.  I also served a green salad, black-eyed peas (slow cooker), and green beans (recipes, see the search box).

CREAMY HERBED COD WITH MUSHROOMS

–cod (size of 3 decks of cards, one-half pound)

–marjoram, tarragon, parsley (bottled)

–mushrooms (baby bellas, sliced, 6 to 8)

–flour

–milk (dairy or almond, not soy)

–salt and pepper

–olive oil

1 – Slice 6 to 8 baby bella mushrooms, and place in a covered baking dish.  Place one-half cup of dairy or almond milk in a microwaveable cup; microwave on high for 1 minute.  In a separate cup, please 1 tablespoon of flour.  When the milk has heated, slowly (very slowly, in parts), add the milk to the flour, stirring briskly.  Then pour the white sauce atop the mushrooms.  Season with salt, pepper, marjoram, tarragon, parsley, and olive oil.  Stir.  Microwave on high for 3 minutes.

2 – Place the cod amid the mushrooms and sauce.  Season with salt, pepper, marjoram, tarragon, parsley, and olive oil.  Microwave the cod for 7 minutes.

PARSLEYED FLOUNDER & SHRIMP WITH MUSHROOMS & CROUTONS IN WINE – BRANDY – WORCESTERSHIRE WHITE SAUCE / BASIL SPRING MIX SALAD WITH TOMATO – ZUCCHINI – BROCCOLI FLORETS IN RED WINE – OLIVE OIL DRESSING

–flounder (2, thin, thawed from frozen)

–shrimp (thawed from frozen, 6 to 8 small)

–parsley (fresh, chopped)

–mushrooms (baby bellas, 6 to 8, sliced)

–croutons (Texas Toast garlic & butter, a handful, packaged)

–white wine (cooking wine is fine

–brandy (1 tablespoon)

–Worcestershire sauce (1 tablespoon)

–flour

-salt and pepper

–olive oil

–spring mix salad (one-half package)

–tomato (1, medium, chopped)

–zucchini (1, medium, sliced)

–broccoli florets (one-half head, broken apart in bite-sized pieces)

–red wine (cooking wine is fine)

–extra virgin olive oil

1 – Place one-half package of spring mix in a mixing bowl.  Add 1 chopped tomato, 1 peeled and sliced zucchini, one-half head of broken florets of broccoli, basil, salt, and pepper.  Stir well.  Just before dinner, add a small amount of red wine and a generous amount of extra virgin olive oil. 

 

2 – Slice 6 to 8 baby bella mushrooms and place in a covered baking dish.  Place one-half cup of white wine and 1 tablespoon of Worcestershire sauce in a microwaveable cup, and microwave on high for 1 minute.  In a separate cup, place 1 tablespoon of flour.  Slowly add the wine mixture to the flour, stirring briskly.  Then pour the resulting white sauce atop the mushrooms.  Season with salt, pepper, and olive oil.  Microwave on high for 3 minutes. 

3 – Rinse 6 to 8 small, deveined, tail-off, shell-off shrimp, and then place in a small microwaveable covered bowl.  Season with salt, pepper, garlic, and olive oil.  Microwave on high for 2 minutes.  Set aside.

4 – Place the flounder atop the mushrooms, in the white sauce.  Season with salt, pepper, and olive oil.  Microwave on high for 2 and one-half minute (longer if flounder are thick).  Add shrimp, 1 handful of Texas Toast garlic – butter croutons, and a sprinkling of parsley.  Microwave for 30 seconds more.

5 – Serve the salad as a first course.  Serve the flounder and shrimp hot.  I also served Brussel sprouts with oregano (for recipe, use the search box on this blog).
