MARINATED COD WITH HONEY – APPLE JUICE – MINCED GARLIC – CAYENNE – LEMON ACCOMPANIED BY SALSA OF PEACH – AVOCADO – GREEN ONION – BANANA PEPPER – CILANTRO – LIME ATOP QUINOA

Note:  For best results, marinate the cod for 1 to 3 hours in the refrigerator.

For 4:

–cod (size of 4 decks of cards, 1 pound)

The marinade:

–honey (bottled)

–apple juice (organic, bottled)

–minced garlic (in a jar)

–cayenne pepper (bottled)

–lemon juice (bottled)

–salt and pepper

–olive oil

Salsa:

–peach (1, fresh, chopped)

–avocado (1, diced)

–green onion (2 stalks, chopped)

–banana peppers (bottled; diced)

–cilantro (fresh, 1 handful, chopped; or parsley, fresh, 1 handful, chopped)

–lime juice (bottled)

1 – Place 2 tablespoons of honey, 1 cup apple juice, 1 tablespoon of minced garlic, 2 squirts of lemon juice in a mixing bowl large enough for the cod.  Season with salt, pepper, cayenne pepper, and olive oil.  Submerge the cod.  Place, covered, in the refrigerator for 1 to 3 hours.

2 – Place 1 chopped fresh peach, 1 diced avocado, 2 chopped stalks of green onion, 12 chopped banana pepper rings, 1 chopped handful of cilantro (or parsley), and 2 spirts of lime juice in a small mixing bowl.  Season with salt and pepper.  Fold ingredients gently.  Keep refrigerated until time for dinner.

3 – Place the cod in a covered baking dish.  Cover with the marinade.  Microwave on high for 8 and one-half minutes.  Cod is done when it begins to break apart.

4 – Serve the cod and sauce hot, salsa on the side, atop quinoa (recipe, see the search box on this blog).

MARINATED CILANTRO – LIME CHICKEN ATOP TURMERIC JASMINE RICE & WITH SALSA OF AVOCADO – PEACH – ONION – RED BELL PEPPER – FRESH PARSLEY – LIME JUICE

–4 chicken tenderloins or breast strips

–cilantro (fresh if possible)

–lime juice (bottled)

–turmeric (or saffron)

–jasmine rice (sticky white rice)

–avocado (one-half, chopped)

–peach (1, fresh, chopped)

–onion (one-fourth, chopped)

–red bell pepper (2 slices, chopped)

–parsley (1 handful, fresh, chopped)

–lime juice (bottled)

–salt and pepper

–olive oil

1 – Place chicken in a plastic bag.  Season with cilantro and lime juice.  Let marinate at least three hours (or overnight).

2 – Place two-thirds cup of jasmine rice in a covered baking dish.  Add 1 cup of water.  Season with turmeric (generously) and olive oil.  Microwave on high for 5 minutes.  Then microwave for 10 minutes on 50 percent power.  When finished, keep covered to preserve warmth.

3 – Peel and chop 1 fresh peach, scoop out pulp of one-half avocado, chop 2 slices of red bell pepper, and peel and chop one-fourth onion.  Add to a mixing bowl.  Season with lime juice.  Chop 1 handful of fresh parsley, and add to the bowl.  Stir well.  Refrigerate until time for dinner.  (Better if done ahead.)

4 – Pour the contents of the plastic bag with chicken into a covered baking dish.  Add a little more water.  Season chicken with salt, pepper, and olive oil.  Microwave on high for 5 and one-half minutes.

5 – Serve the chicken hot, atop the turmeric rice, with chilled salsa to the side of the chicken.

HERBED CHICKEN WITH SALSA OF ORANGE – AVOCADO – GREEN ONIONS IN HONEY – LIME DRESSING

–4 chicken tenderloins or breast strips

–Mrs. Dash seasoning (I used original variety)

–salt and pepper

–olive oil

–orange (1, fresh)

–avocado (one-half, fresh)

–green onions (2 stalks, chopped)

–honey

–lime juice

1 – Place the chicken in a covered baking dish with a little water.  Season with Mrs. Dash, salt, pepper, and olive oil.  Set aside.

2 – Cut open the orange, and break apart the sections.  Cut each section into 2 pieces.  Cut open the avocado, discard the pit, and chop one-half; add to the orange in a mixing bowl.  Chop 2 stalks of green onions and add to the bowl  Season with a small amount of honey and lime juice.  Stir gently.

3 – Microwave the chicken on high for 5 and one-half minutes.

4 – Serve the chicken hot, with the salsa to the side.  I also served a salad, crowder peas, and asparagus with lemon pepper (recipes, see search box).

OVEN FRIED COD TACOS WITH SEASONED SAUCE – SLAW – CHUNKY TOMATO SALSA / BAKED NAVY BEANS WITH CATSUP & BROWN SUGAR

–cod (size of 3 decks of cards, one-half pound)

–corn tortilla shells

–mayonnaise

–yogurt (non-fat, plain)

–plain breadcrumbs (boxed)

–cumin

–oregano

–dill

–salt and pepper

–olive oil

–banana peppers (bottled, cut)

–lime juice

–cayenne pepper

–capers

–angel hair slaw

–chunky tomato salsa (your favorite degree of spicy, bottled)

–navy beans (dried; soak overnight)

–onion (one-half)

–catsup (one-half cup)

–brown sugar (2 generous tablespoons)

–chicken broth (non-fat, low sodium)

1 – Place two-thirds cup of navy beans in a slow cooker.  Slice one-half onion and add to the cooker.  Place one-half cup of catsup and 2 generous tablespoons of brown sugar in the cooker.  Add chicken broth just to cover the beans and sauce.  Cook in a slow cooker for 7 hours; do not remove lid to cover, because cooking will be compromised.  When finished, keep setting on “warm” until time for dinner.

2 – Place 2 tablespoons of mayonnaise and 2 tablespoons of yogurt in a small bowl.  Add half a dozen cut portions of banana peppers and about a dozen capers.  Season with salt, pepper, cumin, oregano, dill, cayenne pepper, and a squirt of lime juice.  Stir well.  Set aside.

3 – Place 2 handfuls of angel hair slaw in a colander and rinse well.  Then place in a bowl for serving.

4 – Place cod in a covered baking dish with a little water.  Season with salt, pepper, and generously with olive oil.  Sprinkle plain breadcrumbs on top.  Microwave on high for 6 minutes.

6 – Microwave 2 tortilla shells for 30 seconds.

5 – Use a buffet to serve dinner.  Have guests place a portion of cod within a tortilla shell, then add slaw and sauce.  Finish with salsa.  Serve the beans as a side.

A Simple Dinner:  STEAMED SALMON IN WHITE WINE & LEMON WITH TOMATO – ONION SALSA / COUSCOUS / TARRAGON SPLIT PEA SOUP WITH FAUX BACON & ONION

–split peas (dried; no soaking required)

–Bac’n piece

–onion (one-half, chopped)

–tarragon (fresh if possible)

–chicken broth (non-fat, low sodium)

–salmon (size of 3 decks of cards, one-half pound)

–white wine (cooking wine is fine)

–lemon juice

–salsa (hot or mild, from a jar)

–couscous

1 – Place two-thirds cup of split peas in a slow cooker.  Add 2 and one-half cups of chicken broth.  Slice one-half onion and add to the peas.  Season with salt, pepper, olive oil, tarragon, and Bac’n pieces.  Cook on high for 6 hours.  Keep on “warm” setting until time for dinner.

2 – Place the salmon in a covered baking dish.  Drench in lemon juice, and then add a little white wine.  Season with salt, pepper, and olive oil.  Set aside.

3 – Place 1 cup of couscous in a covered baking dish.  Add 1 and one-half cup of water.  Season with salt, pepper, and olive oil.  Microwave on high for 3 minutes.  Let sit to allow couscous to set up.

4 – Microwave the salmon for 4 and one-half minutes.

5 – Serve the split pea soup as a first course.  Then serve the salmon atop the couscous.

SEASONED CHICKEN WITH STRAWBERRY – PAPAYA – PINEAPPLE SALSA / BUTTERNUT SQUASH WITH ONION / GREEN BEANS WITH ALMONDS

–4 chicken tenderloins or breast strips

–Mrs. Dash seasoning mix (original, bottled)

–strawberries (4 or 5, medium)

–tropical fruit (one-half can)

–onion (divided, 1, medium)

–mint (bottled)

–butternut squash (1 package)

–green beans (frozen, one-half package)

–almonds (sliced, one-half package)

1 – Slice the strawberries and add to mixing bowl.  Add one-half can of tropical fruit.  Dice one-half onion into small pieces, and add to the bowl.  Season with mint and a little sugar.  Stir well.

2 – Place the chicken in a covered baking dish with a little water.  Season with salt, pepper, Mrs. Dash seasoning mix, and olive oil.  Set aside.

3 – Place the butternut squash in a covered mixing bowl.  Slice one-half onion and place amid the squash.  Season with salt, pepper, and olive oil.  Microwave for 4 minutes on high.

4 – Place the green beans in a covered baking dish with a little water.  Sprinkle the almonds on top.  Season with salt, pepper, and olive oil.  Microwave on high for 4 minutes.

5 – Microwave the chicken for 5 minutes on high.

6 – Serve the hot chicken with the cold salsa, and with the squash and green beans as sides.

DILLED SALMON WITH TOMATO-AVOCADO-FETA-ONION SALSA / DILLED POTATOES/ GREEN PEAS TARRAGON

–salmon (size of 3 decks of cards)

–olive oil

–salt and pepper

–dill (fresh if possible)

–tomato (medium, 2 slices)

–avocado (one-half)

–feta cheese (one-fourth package)

–onion (medium, one-fourth)

–potatoes (2, medium)

–green peas (frozen, one-half package)

–tarragon (fresh if possible)

 

1 – Place the salmon in a covered baking dish.  Season with dill, salt, pepper, and olive oil.  Add a little water to the dish.  Set aside.

2 – Scrub the potato skins.  Cut to one-inch pieces.  Add 1 inch of water to a covered baking dish.  Season with dill, salt, pepper, and olive oil.  Cut on high in the microwave for 15 minutes.  Check to be sure that water has not boiled away, if lid is not tight.

3 – Place green peas in a covered baking dish.  Season with tarragon, salt, pepper, and olive oil.  Add an inch of water.  Cook on high in the microwave for 5 minutes.

5 – Chop the tomato, avocado, onion, and place in mixing bowl.  Add feta cheese.  Sprinkle dill, salt, pepper, and olive oil over the whole.  Stir well.  Change to serving bowl.

6 – Cook the salmon on high in the microwave for 4 and one-half minutes.  Test the center to see that it is done.  If not, return to microwave for 1 minute.

7 – Serve the salmon, potatoes, and green peas hot, and the salsa beside the salmon, cold.
