A Celebratory Dinner for 2:  NEW ORLEANS STYLE ORANGE ROUGHY PECAN CREOLE WITH WORCESTERSHIRE – LEMON – PARSLEY – CLAM JUICE

For 2:

–orange roughy (4 thin fillets, one-half pound)

–pecan bits (one-half cup, divided)

–creole seasoning (1 tablespoon, bottled)

–Worcestershire sauce (2 tablespoons, divided)

–lemon juice (4 squirts, divided)

–parsley (fresh, 1 handful; or dried, 1 tablespoon)

–clam juice (bottled, one-third cup)

–bread crumbs (small amount just to dust the fish)

–pepper (no salt)

–olive oil

1 – Place one-half of the pecan bits in a food processor.  Add 1 tablespoon of Worcestershire, 2 squirts of lemon juice, and 2 tablespoons of olive oil.  Pulse until smooth, a pecan butter.  Set aside.

2 – Place the orange roughy in a single layer in a large, shallow baking dish.  Drench in lemon juice.  Add clam juice and 1 tablespoon of Worcestershire sauce.  Season with creole spice.   Sprinkle lightly with bread crumbs.  Then carefully spread the pecan butter on top of the fish.  Sprinkle with parsley, and a few drops of olive oil.

3 – Microwave on high for 5 minutes.  When finished, test a thicker piece to be sure that fish is done.  If not, replace in microwave for 1 minute more.

4 – Serve the orange roughy hot.  This dish goes well with the nutty flavor of quinoa cooked in chicken broth (microwave two-thirds cup of quinoa and 1 and one-third cup of broth for 6 minutes on high, followed by 9 minutes on 50 percent power).

For 4:

–orange roughy (thawed from frozen, 4 fillets of the size of 1 deck of cards each)

–Creole seasoning (boxed, 1 tablespoon for all 4 fillets)

–breadcrumbs (plain, boxed, one-half cup)

–toasted pecan bits (one-third cup; toast pecans for 1 minute on high, and then stir and toast 1 minute more)

–parsley (fresh, 1 handful, chopped)

–lemon (1, fresh, sliced)

–clam juice (one-half cup, bottled)

–Worcestershire sauce (3 tablespoons, bottled)

–lemon juice (2 squirts, bottled)

–olive oil

–pepper (no salt, because the Creole seasoning has salt)

1 – Place the clam juice, Worcestershire sauce, and lemon juice, with a few drops of olive oil, in the large baking dish with cover.  Microwave on high for 3 minutes.

2 – Season the orange roughy with the Creole spice.  Place an orange roughy fillet in a plastic bag with a few drops of olive oil.  Add breadcrumbs and shake.  Repeat with each fillet.  Place the fillets in the sauce.  Top with pecan bits, parsley, and sliced lemon.  Finish with a few drops of olive oil.

3 – Microwave on high for 7 minutes.  Place atop jasmine rice (follow microwave recipe for 1 cup on the package).

4 – Serve the orange roughy hot, atop the jasmine rice.

LEMON ORANGE ROUGHY / SUMMER SQUASH WITH GREEN ONIONS / CAULIFLOWER WITH OREGANO

–orange roughy (2 medium fillets, frozen)

–lemon pepper

–lemon juice

–salt and pepper

–olive oil

–summer squash (1, medium)

–green onions (2 stalks)

–cauliflower (1 small head)

–oregano (fresh if possible)

 

1 – Wash the cauliflower and remove the leaves.  Cut off chunks of the cauliflower and place in a covered baking dish with 1 inch of water.  Season with salt, pepper, oregano, and olive oil.  Microwave on high for 15 minutes.

2 – Place the thawed orange roughy in a covered baking dish with a little water.  Drench in lemon juice.  Season with salt, pepper, lemon pepper, and olive oil.  Set aside.

3 – Peel and slice the squash.  Slice green onions into 1-inch pieces.  Place squash and onions in a covered baking dish.  Season with salt, pepper, and olive oil.  Microwave on high for 3 minutes.

4 – Microwave the orange roughy for 5 minutes.

5 – Serve the orange roughy hot, with the cauliflower and squash as sides.

SPICY PECAN ORANGE ROUGHY WITH PARMESAN / QUINOA IN BROTH / RED BEANS WITH FAUX BACON

–3 fillets of orange roughy (size of 3 decks of cards, one-half pound)

–pecan bits (one-half package)

–Cajun seasoning (or Creole, found in most supermarkets)

–thyme

–lemon juice

–Parmesan cheese

–parsley (fresh if possible)

–seasoned crackers (gluten free)

–salt and pepper

–olive oil

–quinoa (boxed)

–chicken broth (non-fat, low sodium)

–red beans (dried, soak overnight)

–Bac’n pieces (soy bacon

–minced onion

 

1 – Place 1 cup of beans in a slow cooker.  Cover with chicken broth, allowing 2 inches at the top of broth.  Season with salt, pepper, olive oil, Bac’n pieces, and minced onion.  Cook in slow cooker for 6 hours.  When finished, turn setting to “warm” until time for dinner.

2 – Place two-thirds cup of quinoa in a covered baking dish.  Add one and one-third cup of chicken broth.  Season with salt and olive oil.  Microwave for 6 minutes on high, and then microwave for 9 minutes on 50 percent power.

3 – Empty half a box of gluten free, seasoned, crackers in a plastic bag.  Crush against the kitchen counter with the back of an ice cream spoon.  Place the orange roughy fillets on a large plate.  Season with salt, pepper, thyme, Cajun (or Creole) seasoning, lemon juice, and olive oil.  Place the orange roughy in the plastic bag with the cracker crumbs.  Shake well.  Place the completed fillets in a covered baking dish with a very small amount of water.  Sprinkle with pecans, Parmesan cheese (generously) and parsley.  Microwave on high for 6 minutes.

4 – Serve the orange roughy on top of the quinoa, with the red beans as a side.

A Simple Dinner:  ORANGE ROUGHY WITH PAPRIKA – GARLIC – ONION / BUTTERY DUTCH POTATOES / BROCCOLI WITH HOT SAUCE

–paprika

–garlic powder

–minced onion

–salt and pepper

–Dutch potatoes (8 to 10, small)

–broccoli (1 stalk, fresh)

–hot sauce (such as Texas Pete)

1 – Place the Dutch potatoes in a covered baking dish with 1 inch of water.  Season with salt, pepper, and olive oil.  Microwave on high for 15 minutes.  Check to be sure that water has not boiled out.

2 – Place the orange roughy in a covered baking dish with a little water.  Season with paprika, garlic powder, minced onion, salt, pepper, and olive oil.  Set aside.

3 – Cut the stalk of the broccoli away from the florets and stems, and then discard the stalk.  Break apart the broccoli.  Place in a covered baking dish with a little water.  Season with salt, pepper, and olive oil.  Microwave on high for 4 minutes.

4 – Microwave the orange roughy for 6 minutes.

5 – Serve the dinner hot with hot sauce for the broccoli.

GRECIAN ORANGE ROUGHY / ANGEL HAIR PASTA / BROCCOLI

–orange roughy (1 large, to share)

–feta cheese

–diced tomatoes (canned)

–onion (medium)

–oregano, basil, parsley (fresh if possible)

–garlic powder

–black olives (canned)

–salt and pepper

–olive oil

–angel hair pasta

–broccoli

 

1 – Dip out half a can of diced tomatoes into covered baking dish.  Chop one onion.  Season with salt, pepper, and olive oil.  Cook on high for four minutes.  Set aside.

2 – Put two fistfuls of angel hair pasta in a long dish, covering with one inch water.  Season with one teaspoon of salt.  Cook, uncovered, on high for 2 minutes; then on 50 percent power for 4 minutes.  When finished cooking, cover with lid to preserve warmth.

3- Prepare broccoli, cutting off the stalk and cutting remainder into large chunks.  Cook on high for 4 minutes.

4 – Place the orange roughy on top of the onion and tomato.  Place black olives around the sides (but not on top, which would increase cooking time).  Season with salt, pepper, garlic powder, tiny snips of oregano and basil, and olive oil.  Sprinkle with generous amount of feta cheese.  Garnish with parsley.  Cook 9 minutes in the microwave, covered.

5 – Drain the pasta, and serve with appropriate utensil in a dish.  Cover to keep warm.

6 – Serve the orange roughy, divided into servings, on top of the pasta.  Serve the broccoli as a side.  Serve all hot.
