SWEET BASIL CHICKEN STEW WITH RED BELL PEPPER – CAYENNE – VIDALIA ONION –  GREEN BEANS – CORN IN BROTH & RED WINE SAUCE ATOP COUSCOUS

For 2 (note; just 2):

–4 chicken tenderloins or breast strips

–basil (fresh if possible, 4 diced leaves; or one tablespoon, dried)

–red bell pepper (one-half, medium, cut in 1-inch pieces)

–cayenne pepper (one-fourth teaspoon)

–Vidalia onion (one-half, medium, sliced)

–green beans (1 large handful)

–corn (one-half cup)

–sugar (1 teaspoon)

–chicken broth (non-fat, low sodium)

–red wine (one-fourth cup)

–couscous (1 small package)

 

1 – Place the chicken, red bell pepper, Vidalia onion, green beans, and corn in a slow cooker.  Season with basil, cayenne pepper, sugar, salt, pepper, and olive oil.  Add red wine.  Pour chicken broth in the cooker just to cover the chicken and vegetables.  Season with a few drops of olive oil.

2 – Place the cooker on low, and let cook for 5 and one-half hours.  Remove the chicken and shred (chicken will already have begun to break apart).  Return the chicken to the cooker, and cook on low for 30 minutes longer.  When finished, place the setting on warm until time for dinner.

2 – Place one and one-fourth cup water in a covered baking dish.  Add the couscous spice package and a few drops of olive oil.  Microwave on high for 6 minutes (until just boiling).  Pour the couscous in the water with the spices.  Stir.  Re-cover, and let sit for at least 5 minutes.

3 – Serve the chicken stew, hot, atop the couscous.

LEMON – BASIL CHICKEN PASTA WITH MUSHROOMS – ONION – CORN IN BROTH

For 4:

–6 chicken tenderloins or breast strips

–lemon juice

–lemon zest

–lemon pepper

–basil (fresh if possible, 8 to 10 large leaves, chopped)

–pasta (bowtie or penne, 1 cup, dry)

–mushrooms (baby bellas, 8 to 10, sliced)

1 – Place 1 cup bowtie (farfalle) or penne pasta in an uncovered baking dish with water to cover 1 inch above the pasta.  Season with salt.  Microwave on high for 6 minutes; then microwave on 50 percent power for 8 minutes.  When finished, keep covered to preserve warmth.

2 – Place 8 to 10 sliced baby bella mushrooms, 1 medium onion, and one-half cup frozen corn in a covered baking dish with a little chicken broth.  Season with lemon juice, lemon zest, lemon pepper, and olive oil.  Microwave on high for 4 minutes.  When finished, keep covered to preserve warmth.

3 – Place 6 chicken tenderloins or breast strips in a covered baking dish with a little chicken broth.  Season with lemon juice, lemon zest, lemon pepper, and olive oil.  Microwave on high for 8 and one-half minutes.  When finished, cut into bite-sized pieces.

4 – Drain the pasta, and add to the vegetables.  Then add the cut-up chicken.  Stir well.  Add a generous amount of chopped basil (fresh if possible) on top.  Finish with a few drops of olive oil.

5 – Serve the chicken pasta hot.  Leftovers are best served cold.

COLD BOILED SHRIMP WITH PESTO DIPPING SAUCE / ASPARAGUS WITH LEMON ZEST / PARSLEYED BABY LIMA BEAN SOUP WITH CORN – TOMATOES – ONION IN BROTH

–shrimp (60, small, for 2 servings)

–pesto sauce (in a jar)

–yogurt (plain, non-fat)

–asparagus (one-half bunch, fresh)

–lemon zest (lemon peel)

–baby lima beans (frozen, 1 cup)

–corn (frozen, one-third cup)

–parsley (fresh if possible)

–tomatoes (2, fresh, chopped)

–onion (one-half, chopped)

–chicken broth (non-fat, low sodium)

1 – Place 1 cup of baby lima beans in a slow cooker.  Add one-third cup of corn.  Chop one-half onion, and add to the cooker.  Chop 2 tomatoes, season with salt and pepper, and add to the cooker.  Chop 1 handful of fresh parsley, and season the soup.  Season also with salt, pepper, and olive oil.  Cook for 6 hours on low.  When finished, keep setting on warm until time for dinner.

2 – Rinse 60 small thawed shrimp in a colander.  Place in a covered baking dish with 1 inch of water.  Microwave on high for 3 and one-half minutes.   Drain the water.  Set aside.

3 – Place 2 tablespoons of yogurt in a small mixing bowl.  Add 2 tablespoons of pesto sauce.  Stir well.  Keep refrigerated until time for dinner.

4 – Place one-half bunch of fresh asparagus in a covered baking dish with a little water.  Season with salt, pepper, lemon zest, and olive oil.  Microwave on high for 4 minutes (longer if desired for more tender asparagus).

5 – Place ice cubes in 2 soup bowls.  Arrange the shrimp atop the ice.  Serve the pesto in small cups, on a plate with the soup bowls filled with shrimp.

6 – Serve the bean and corn soup as a first course.  Then serve the shrimp ice cold, with the asparagus as a side.

CHILLED LEMONY SALMON – COUSCOUS SALAD WITH CORN – GREEN PEAS – BASIL – OREGANO – DILL – PARSLEY / BACON – FLAVORED BIBB LETTUCE SALAD

–salmon (size of 3 decks of cards)

–couscous (three-fourths cup measure; boxed)

–corn (one-half can)

–green peas (one-half can)

–bibb lettuce (half a package)

–Bac’n pieces

–salad dressing of your choice

–salt and pepper

1 – Place three-fourths cup of couscous in a covered baking dish.  Add 1 cup of water.  Season with one-fourth teaspoon of salt and a few drops of olive oil.  Microwave on high for 2 and one-half minutes.  Let set.  Chill in refrigerator.

2 – Place salmon in a covered baking dish with a little water.  Drench in lemon juice.  Season with salt, pepper, basil, oregano, dill, parsley, and olive oil.  Microwave on high for 4 and one-half minutes.  Set aside.

3 – Place one-half package of bibb lettuce in a mixing bowl.  Season with salt, pepper, and Bac’n pieces.  Add salad dressing of your choice, to taste.  Chill until time for dinner.

4 – Season the chilled couscous with basil, oregano, dill, and parsley.  Break apart the salmon in large chunks, discarding the skin.  Fold very gently into the couscous.  Chill the salmon and couscous until time for dinner.

5 – Serve the salads cold, on the same plate.

CURRIED COD CHOWDER WITH BASIL – CORN – ONION – BANANA PEPPERS IN BROTH & COCONUT MILK / QUINOA IN BROTH / BABY SALAD GREENS WITH MUSHROOMS – RED ONION – PARMESAN

–coconut milk (canned, one-third cup)

–quinoa (boxed)

1 – Place two-thirds cup of quinoa in a covered baking dish.  Add one and one-third cups of chicken broth.  Season with one-half teaspoon of salt and a little olive oil.  Microwave on high for 6 minutes; then microwave on 50 percent power for 9 minutes. 

2 – Slice one-half onion; place in covered baking dish.  Place one-third cup of coconut milk in a measuring cup; add one-third cup of chicken broth.  Stir in 2 tablespoons of green curry paste.  Add the milk – broth to the baking dish with the onion.  Microwave on high for 3 minutes.  Nestle the cod in the milk – broth.  Season with salt, pepper, and basil.  Place 6 to 8 slices of banana peppers on top.  Place one-half package of corn on either side of the cod.  Stir gently.  Set aside.

3 – Place one-half package of baby salad greens in a mixing bowl.  Add 10 to 12 sliced baby bella mushrooms.  Slice one-half red onion, and add to the salad greens and mushrooms.  Generously add Parmesan cheese.  Season with salt and pepper.  Stir in your favorite salad dressing.

4 – Microwave the cod for 9 minutes on high.

5 – Serve the salad as an appetizer.  Then serve the cod and corn on top of the quinoa.

OVEN FRIED CHICKEN WITH CATSUP – DEJON – ONION – PICKLES ON CIABATTA BUN / BARBECUED BEANS WITH MAPLE SYRUP / BUTTERED CORN

–4 chicken tenderloins or breast strips

–plain breadcrumbs

–catsup

–Dejon mustard

–sweet pickle relish

–onion (one and one-half, divided, chopped)

–salt and pepper

–olive oil

–ciabatta buns (whole wheat, 2)

–great Northern beans (dried, soak overnight, 1 cup)

–maple syrup

–Bac’n pieces

–corn (one-half package, frozen)

–Promise Activ margarine (heart-healthy)

 

 

1 – Place 1 cup of soaked beans in a slow cooker.  Add 3 cups of water and one-half cup of maple syrup.  Chop 1 onion, and add to the cooker.  Season with salt, pepper, 1 tablespoon of Dejon, one-fourth cup of catsup, and olive oil.  Cook all day long, at least 8 hours (the longer, the better).

2 – Place the chicken in a plastic bag.  Season with salt, pepper, and olive oil.  Pour one-third cup of plain breadcrumbs in the bag.  Shake well.  Place in a covered baking dish with a little water.  Set aside.

3 – Place the corn in a covered baking dish with a little water.  Season with salt, pepper, and margarine.  Microwave on high for 3 minutes.

4 – Place bowls of catsup, Dejon mustard, chopped onion, and sweet pickle relish on the buffet.  Microwave the chicken for 5 minutes. 

5 – Microwave the 2 ciabatta buns for 50 seconds.

6 – Allow your dinner guest to make his/her own sandwich with chicken and the condiments on a ciabatta bun.  Serve the beans and corn as sides.

ROSEMARY CHICKEN / SPINACH – CORN SALAD WITH AVOCADO AND PARMESAN

–4 chicken tenderloins or breast strips

–rosemary (fresh if possible)

–salt and pepper

–olive oil

–chicken broth (non-fat, low sodium)

–corn (frozen, one-half cup)

–spinach (fresh, 2 handfuls)

–avocado (1, medium, fresh)

–Parmesan cheese (shredded)

–garlic powder

 

1 – Place the chicken in a covered baking dish with a little chicken broth.  Season with salt, pepper, rosemary (minced), and olive oil.  Set aside.

2 – Place the corn in a covered baking dish with a little water.  Season with salt, pepper, and olive oil.  Microwave the corn for 2 minutes on high.

3 – Place the spinach in a mixing bowl.  Add the corn and Parmesan cheese (generous sprinkling).  Season with salt, pepper, garlic powder, and olive oil.  Sprinkle with lemon juice.  Stir well to coat.  Cut open and slice the avocado in one-half inch pieces.  Fold gently into the salad.

4 – Microwave the chicken for 5 minutes on high.

5 – Serve the chicken hot, with the cold salad as a side.

2 – Slice one-half onion, and place with sliced mushrooms in a covered baking dish.  Season with salt, pepper, and olive oil.  Add a little chicken broth.  Microwave for 3 minutes in a covered baking dish.  When finished, nestle the chicken amid the mushrooms and onion.  Season with salt, pepper, and olive oil.  Sprinkle generously with Parmesan cheese.  Set aside.

3 – Place 2 handfuls of green beans in a covered baking dish.  Season with salt, pepper, marjoram, and olive oil.  Microwave for 4 minutes on high.

4 – Chop the tomato.  Place in covered baking dish.  Add the corn to the tomato.  Season with salt, pepper, and margarine.  Microwave on high for 5 minutes.

5 – Mix 2 tablespoons of yogurt and 1 tablespoon of mayonnaise in a small bowl.  Season with salt and pepper.  Stir vigorously.  Set aside.

6 – Microwave the chicken for 5 minutes. 

7 – Microwave the yogurt – mayonnaise for 30 seconds.  Spoon over the chicken.

8 – Serve the chicken hot, with the beans, corn, and green beans as sides.

A Simple Dinner:  BREADED & CREAMED COD WITH BRANDY, WHITE WINE, & BROTH / ZUCCHINI / BUTTERED CORN

–cod (size of 3 decks of cards; one-half pound)

–plain breadcrumbs

–mayonnaise

–yogurt (plain, non-fat)

–brandy (an inexpensive brand)

–white wine (cooking wine is fine)

–chicken broth (non-fat, low sodium)

–zucchini (1, medium)

–corn (frozen, one-half package)

–Promise Activ (heart-healthy margarine)

–olive oil

–salt and pepper

–parsley

 

1 – Place corn in a covered baking dish.  Season with salt, pepper, and Promise Activ.  Microwave on high for 3 minutes.

2 – Peel and slice zucchini into one-fourth inch pieces.  Place in a covered baking dish.  Season with salt, pepper, and olive oil.  Microwave on high for 3 minutes (no more).

3 – Place cod in a plastic bag.  Season with salt, pepper, and olive oil.  Add one-third cup of breadcrumbs.  Shake well.  Place in a deep, covered baking dish.  Add equal small amounts of brandy, wine, and chicken broth.  Microwave for 6 minutes.  Check to be sure that liquid is not bubbling up.  If it is, reduce power to 50 percent, and double remaining cooking time.

4 – Place 2 tablespoons of mayonnaise and 2 tablespoons of yogurt in a microwaveable bowl.  Season with salt and pepper.  Stir well.  Microwave on high, uncovered, for 45 seconds.  Pour over the cooked cod.  Add a little parsley on top.

5 – Serve the dinner hot.

TILAPIA WITH ZUCCHINI – CORN SALSA / BROWN RICE

–2 fillets of tilapia

–zucchini (1, fresh)

–corn (half a can)

–Bac’n pieces (soy bacon)

–pepperoni peppers (in a jar)

–brown rice

–salt and pepper

–olive oil

 

1 – Place the tilapia in a covered baking dish.  Season with salt, pepper, and olive oil.  Put a little water in the dish.  Set aside.

2 – Chop the zucchini into small pieces.  Place in covered baking dish.  Add the corn, a generous sprinkling of Bac’n pieces, and half a dozen rings of pepperoni peppers.  Season with salt, pepper, and olive oil.  Cook for 4 minutes in the microwave on high.

3 – Measure two-thirds cup of brown rice into a covered baking dish.  Add two-thirds cup of water.  Season with a teaspoon of salt and a couple of drops of olive oil.  Cook for 5 minutes in the microwave on high.

4 – Cook the tilapia for 6 minutes in the microwave on high.

5 – Serve the tilapia on top of the brown rice, with the salsa served over the whole entrée.  Serve hot.

BASIL BARBECUED SALMON / GREEN BEAN-CORN-ONION SUCCOTASH

–salmon (the size of 3 decks of cards)

–basil (fresh if possible)

–barbecue sauce (bottled)

–green beans (frozen)

–corn (canned)

–onion

–olive oil

–salt and pepper

 

1 – Place salmon in covered baking dish.  Add a very small amount of water.  Salt and pepper. Cover with barbecue sauce (to your taste).  Add tiny snips of basil.  Season with olive oil.  Set aside

2 – Using large baking dish, place two cups of green beans in covered baking dish.  Add one-half can of whole kernel corn.  Chop one-half onion, and add to vegetables.  Season with salt, pepper, and olive oil.  Stir well.  Cook for 6 minutes in microwave on high.

3 – Cook salmon for 4 and one-half minutes.  When cooking time has finished, test center to be sure that salmon is done.  If not, return to microwave for 1 minute.

4 – Serve hot.
