–4 chicken tenderloins or breast strips
–fire – roasted veggie crackers (I used Van’s non-gluten crackers)
–salt and pepper
1 – Place the chicken in a plastic bag. Season with salt, pepper, cayenne pepper, and olive oil. In a separate plastic bag, place 2 handfuls of fire – roasted crackers. Using the back of an ice cream spoon against the kitchen counter, break the crackers into very fine pieces. Pour into the bag with the chicken. Shake well. Place the chicken in a covered baking dish with a little water. Microwave on high for 5 minutes. (Do not overcook!)
2 – Serve the chicken hot.
